Werner Pichlmaier, Executive Chef

The culinary signature of Werner Pichlmaier stands for regional-global cuisine. The Styrian relies on top products from Austria and likes to complement them with high-quality French ones and a focus on sustainable cultivation. A conscious and appreciative approach to food always accompanies his craft.

As Executive Chef, Werner Pichlmaier is responsible for the legendary Café Imperial Wien and the unparalleled banquets of the Palais Hotel as well as for the three-toque Restaurant OPUS. His talent and passion for culinary art were manifested by his father in his parents' gourmet restaurant “Der Pichlmaier” in Graz-St.Peter. At the age of ten Werner Pichlmaier was allowed to help in the kitchen with his two brothers after finishing his homework at the regulars’ table in the restaurant. While his great role model was the German three Michelin Star Chef Dieter Mueller at the time, Werner Pichlmaier is now inspired by specialist magazines and, more recently, Instagram for extraordinary gourmet dishes.

The Exquisite Master Confection, Handmade at Hotel Imperial Vienna

They say our best souvenirs are retained in our memory. Nonetheless, the Imperial Torte is one of the most popular sweet gifts visitors take home from Vienna.

Legend has it that a kitchen apprentice created the Imperial Torte in honour or Emperor Franz Josef I to mark the opening of the hotel in 1873. This event marked the birth of the superb Imperial Torte. The young scullion Xavier Loibner guarded the recipe with his life, and it has been a secret ever since. People‘s enjoyment of the cake is still as exquisite today as it was in 1873: a mouthwatering chocolate icing, a slightly tart aroma of almonds and the fusion of chocolate cream and marzipan combined to make the perfect composition. This speciality is in a class of its own: every slice takes you back to imperial Vienna in 1873.

Handmade at the Imperial Hotel and then carefully packaged, the Imperial Torte travels across the world.
