Andrew Fraser, Executive Chef

Running the kitchens of one of the Gold Coast’s most successful hotels is all in a days work for Chef Andrew Fraser and his team.  Together they master an amazing and innovative menu at the Resort’s signature restaurant, be it our buffet, a la carte or for special food events.   

 

Every dish is a masterpiece, every banquet event has an air of quality, and every menu is a chance for him to express his creative flair.  From London’s top restaurants to fine dining in Hong Kong and beyond, there aren’t many places executive chef, Andrew Fraser hasn’t applied his extensive skills.

Erick Henck, Sous Chef

The award-winning Surfers Paradise Marriott Resort & Spa has appointed renowned French Sous Chef, Eric Henck, to head up the resort’s new all day dining restaurant – Citrique.

 

Eric brings a wealth of international experience to the Marriott following long serving stints at the prestigious Ritz-Carlton Grand Cayman in the Caribbean and The Ritz-Carlton Amelia Island in Florida. He also boasts years of fine-dining culinary experience in several Michelin star restaurants in France, Germany and Brazil.
